Product Evaluation1st of March 2011 - Appetisers - RICE PAPER ROLLS
The finishing product of our appetisers dish was very satisfying. The taste of the rice paper rolls gave you a freshness in your mouth from the herbs. The crunchy capsicum in the rolls complimented the sticky rice outside. the citrus of the lime juice and the salty fish sauce gave a great dressing. The dish was savoury with a strong aromatic flavour. The translucent wrapping of the rice paper let the bright vibrant colours of the fresh vegetables show though. The light coloured rice paper is in contrast by the vivid green parsley garnish. The smell of the rice paper roll gave out a pungent sweet and sour scent. The touch of the individual rolls was silky on the outside with a crunchy and tender inside. The chicken was tender and soft with a moist texture. The vegetables were fresh and juicy. Altogether they were cold and crisp! I really enjoyed eating the rice paper rolls! I have had them before but these one were different. They were very flavoursome and fresh in my mouth. I could eat many of them as they are very light. A few of the people in our class tried them and said they were very delicious! This is good positive feed back.
I was quite happy with how the rice paper rolls turned out! I knew from the start that they weren't going to be the most attractive dish as they are very fiddly to prepare. The way we lied them out on the plate was simple but affective. I think that Maddie and I worked well together to make them look identical choose our best ones! I was a bit worried with the amount of time we had to cook and cool the chicken. The recipe also new to me so we weren't entirely sure how long it would take. But in the end we got it finish with success! For next time I don't think that we could improve on this exact recipe as it was successful. I do think that it would be good to alter the recipes ingredients. You could add different herbs (coriander, parsley), vegetables (carrot, lettuce, cucumber) and meat/seafood/tofu. The rice paper rolls could have almost anything in them of which makes very versatile!

The finishing product of the Pumpkin and Bacon Pesto Pasta was very pleasing! The taste of the pesto pasta was very homely and comforting for any hot or cold day. The flavours in the dish really complimented each other, from sweet to salty, crispy to creamy. As the pasta was cooked perfectly the flavours of the dish stood out. The velvety, smooth pesto melted in the mouth and went extremely well with the caramelised, sweet pumpkin. The crispy bacon gave a hint of salty flavour and another texture to the palette. The savoury dish of pumpkin and bacon pesto pasta showed off its vibrant colours. The bright orange pumpkin and deep, bottle green pesto made the appearance of this meal very appetising. After mixing the ingredients through the vivid green pesto coated the dull, pale pasta The smell of the pungent combinations made my mouth water. The aroma of the onions sauteing in the pan complimented the crunchy bacon. The pungent scent of the pasta gave off a sweet and salty smell. Delicious. The touch of the silky pasta was divine, not to sickly but enough making you want more!Overall the dish was a hot, inviting meal that i enjoyed dearly. It was very filling and incredible easy and quick to make. The pumpkin pesto pasta turned out really well and I would definitely make it again. Next time i would maybe not put as big chucks of pumpkin in and more bacon to balance the sweet pumpkin. If we had longer i would cook the pumpkin for longer as it was a bit hard. It was very healthy and everyone who tried it really enjoyed it. I haven't real had many pesto pastas before but i really loved it! It definitely needed something to freshen it up because it was a bit too creamy for my liking! Maddie and I cooked really well together producing a great dish.

The finishing product of our Herb Crusted Lamb Cutlets with Stuffed Mushrooms and Green Beans was very successful. The taste of the rosemary really compliments the lamb and stuffed mushrooms. The green beans are fresh and break up the saltiness of the stuffing. The crisp and crunchy crust on the lamb makes the lamb seem ever so tender. Everything was cooked to perfection with different textures from: crispy crunchy to smooth, chewy and tender. The dish was savoury with a strong aromatic smell of rosemary. The striking green beans lift the dark lamb and mushrooms and make the dish more lively. The texture of the crusted crumbs go well with the tender lamb cutlets. They were cooked to medium to well done. The colour of the lamb cutlets was pale pink on the inside. The out sided crust was golden brown and the mushrooms were sizzling yellow from the grated parmesan. All the flavours of the meal danced around on my palette. The touch of the mushrooms was silky while the touch of the beans was crispy.I was really excited to cook this main course dish! All the different elements and components that had to be assembled meant that we couldn't stuff around with time. I was really happy with the way we presented our dish as we tried to make it as close to the original image as possible. There was a bit of preparation involved but once it was all done the cooking was a breeze. Maddie and I had to taste a lot to get the seasoning right with the stuffing of the mushrooms and the crusting of the lamb. We didn't want the saltiness to over power our lamb. Next time we could of probably cooked the beans for lest time or ever blanch or steam them. We could have also not added as much salt to the crust as it produced its own salty flavour. We managed our time well and work great together and working partners!I would rate this dish a 5 (like very much)!!
Product Evaluation 2nd of June 2011 - Dessert - PASSIONFRUIT CHEESE CAKE
The finishing product of our Passionfruit Cheese Cake was very successful. The taste of the sweet creamy philly mixture was in contrast with the cold fruity passionfruit. The fresh passionfruit was strong and cut through the smooth sickly cream. The biscuit bases were sweet and golden. The passionfruit was silky and glossy while the creamy filly was white and bright. The shape held together well as we presented it in parfait glasses. The elements were layered with the crunchy biscuit on the base of the glass, cream cheese filling next followed by another layer of biscuit and philly. It was topped with a fresh layer of passionfruit. The aroma of the fruit was strong and it also had a lovely fresh smell from the sprig of mint. Overall the dish was cold. The base was crunchy and crisp in my mouth and complimented the other smooth texture of the filling and passionfruit. When all the elements went together in my mouth it was extra soft. It was very moist and smooth. It was delicious! Our dish didn't make any sound other than the scrapping of our spoons against the glasses, getting every last bit out!
